🌸 Tea bread

2 cups Mixed fruit
2 cups SR flour 1 cup cold strained tea |
1 cup Brown sugar
1 Egg |
- Soak fruit & sugar in tea overnight.
- Add rest of ingredients.
- Bake 1 - 1 1⁄4 hrs @ 350F or 180C.
🌸 Family fruit cake

4 oz. (113 g) Marg/butter 4 oz
1 level tbsp. golden syrup 8 oz. (226 g) plain flour 1 tsp. mixed spice 2 drops almond essence |
4 oz. (113 g) caster sugar
2 eggs 2 tsp. Baking powder 6-8 oz. (170-226 g) mixed fruit A little milk |
- Cream marg, sugar and syrup
- Gradually add beaten eggs
- Sift flour, baking powder and mixed spice and add to mix
- Add mixed fruit, essence and milk
- Spoon into 18cm greased and lined cake tin
- Cook at 350o F for 1 hour or until cooked.

6 oz. (170 g) Marg/butter 6 oz. (170 g) caster sugar |
3 eggs
Jam filling only No icing sugar on top |
